The Enso HD Bunka Knife, a cross between a Nakiri and Gyuto Knife, is an all-purpose tall blade suitable for cutting fruits, vegetables, fish, meat, and more. The belly of the blade makes it the ultimate push-cut master for either long or short cuts, while the triangular tip area is particularly useful for detailed work.
Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention. Each blade is heat-treated to a 61 on the Rockwell scale and hand-ground to approximately a 12° cutting angle, with a hammered or sashimi finish.
All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster, and end cap. The enclosed full tang handle construction is seamless and ensures strength, durability, and balance.
The double-bevel (50/50) edge is suitable for right or left-handed use, with a machine-pressed blade kanji. The first two Japanese characters of the kanji are "Enso," which means "Harmony" in Japanese, and the last three characters are "Nippon Sei," which means "Made in Japan."

The Enso HD Bunka Knife features a VG10 cutting core and a Rockwell hardness of 61, while the Enso SG2 Bunka Knife has an SG2 powder steel cutting core and a Rockwell hardness of 63. Both knives have a double-bevel edge suitable for right and left-handed use, and a 12° blade angle. The Enso HD Bunka Knife has a hammered finish, while the Enso SG2 Bunka Knife has a high-polish finish.
