The Enso HD Prep Knife is designed for peeling and chopping vegetables and fruit, slicing meats, cheeses, and more. Enso handcrafts professional knives with a focus on excellence. The Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention. Every blade is heat treated to a 61 on the Rockwell scale and is hand ground to approximately 12° cutting angle with a hammered or sashimi finish.
All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster, and end cap. The enclosed full tang handle construction is seamless and ensures strength, durability, and balance. The double-bevel (50/50) edge is suitable for both right and left-handed use, with a machine-pressed blade kanji. The first two Japanese characters of the kanji are Enso, which means Harmony in Japanese, and the last three characters are Nippon Sei, which means Made In Japan.
Enso knives are made in Seki City, Japan, one of the most popular and renowned sword-making cities in the country. Seki is rich with history and cultural tradition, and the incredible quality of knives produced there is founded in the technology and beliefs of the ancient Seki sword smiths. The Enso HD Prep Knife is crafted of premium Japanese VG10 37-layer stainless steel for excellent edge retention, with a stunning hammered (tsuchime) finish. The blade has a Rockwell Hardness of 61° and is hand-ground to approximately 12°. The double-bevel edge is suitable for both right and left-handed use, and the black canvas micarta handle features three stainless steel rivets and an end cap. The blade length is 5.5", the blade height is 1.5", the overall length is 10", the spine thickness at the heel is 1.6mm, and the weight is 4.5 oz. (131g). All Enso knives are handcrafted in Seki City, Japan with a lifetime warranty.
