Handcrafted in Seki City, Japan, the Enso HD Boning Knife features a slender-shaped blade, enabling users to pierce the flesh of poultry, fish, and beef with ease, while also allowing them to closely follow the contour of bones. The Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core, ensuring excellent edge retention. Each blade is heat-treated to a Rockwell hardness of 61 and hand-ground to approximately a 12-degree cutting angle, with a hammered or sashimi finish.

All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, a bolster, and an end cap. The enclosed full tang handle construction is seamless, ensuring strength, durability, and balance.

The double-bevel (50/50) edge of the Enso HD Boning Knife is suitable for both right and left-handed use, and the blade's kanji features the first two Japanese characters of "Enso," meaning "Harmony," and the last three characters of "Nippon Sei," meaning "Made in Japan."
