The Enso SG2 Bread Knife, constructed of Japanese SG2 Micro Carbide powder stainless steel, is sharp enough to slice through tough crusts while still producing full, even slices. The scalloped edge makes cutting crusty bread and cake easily, allowing you to glide through without creating excessive crumbs, and also works well to slice large fruit such as pineapple or watermelon.
Enso SG2 features an extremely sharp cutting edge, with a blade constructed of 101 layers of combined alternating soft and hard stainless steel, enveloping the SG2 Micro Carbide powder steel core. The corrosion-resistant powdered carbon steel has an unprecedented 63 Rockwell hardness, ensuring an exceptionally sharp cutting edge. The surface of the blade impresses a fascinating Damascus design pattern.
The handle is made of black canvas micarta with a stainless steel bolster, red spacers, and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, providing outstanding stability and balance.
Each Enso SG2 knife features hand-engraved Japanese kanji that is etched by a Japanese artisan. The first two Japanese characters of the kanji are "Enso," meaning "Harmony" in Japanese, and the last four characters are "Hyaku Ichi Sō-kō," meaning "101 Layer Steel." The Japanese character on the end piece of the handle is "Minori," meaning "Harvest" in Japanese.
